Thought I would do a basic modeling tutorial.
1
-Open the change surface window with q
-Name the surface 1 and hit ok (this will be your basic hall surface)

-Select the polygons you want to work with. (you must be in polygon mode which is in the bottom left)
-ctrl x to cut
-select a new layer (top right comer)
-ctrl v to paste

-With the knife tool start to cut lines to make your panels (Shift k for the knife tool and enter to finalize the cuts.)

-With the drag tool, start to move points to make the shape of the panels you want. On angled planes move the point along the flow of the model to maintain the models shape.
(Shift t for the drag tool)

-To finalize the shape of the panels select the polygons you want and merge. (Shift z to merge)
Note to only select the group of polys you want to merge. Any connected and selected poly will be merged.

-Select non linked points (point mode and hold shift to select multiple points)
Now delete them (hit the del key)

select all the polys in the layer
-Hit b for bevel and then n for the bevel menu
-Inset at 100mm and enter
-q for a new surface and name it 2 (this will become the panels surface)
-Hit b for bevel and then n for the bevel menu
-Shift at 100mm and enter
-Hit b for bevel and then n for the bevel menu
-Inset at 50mm and Shift at 50mm then enter

-ctrl x and panel layer and ctrl v it into the main layer
m to merge the points and hit ok.
Now you have created a model with some basic paneling and surfaces for basic texture mapping.
