StarTrek.com has confirmed a report that Bruce Greenwood is playing Captain Christopher Pike.
Also Winona Ryder will be Amanda Grayston, Spock's mother:

Also in the movie but not previously mentioned is Rachel Nichols (who played Rachel Gibson in JJ Abrams' show Alias). It is unknown on the character that she will be playing.
